Tuna Hash

This is the ultimate in comfort food. Ease into the day without a pang of guilt with this Tuna Hash. Make it easier on yourself with pre-sliced mushrooms and pre-diced potatoes.

  • 1 (5 ounce) can Genova Tuna in Olive Oil
  • 1 cup yellow onion, chopped
  • 1 clove garlic, minced
  • 1-1/2 cup potatoes, peeled and diced
  • 1 (8 ounce) package sliced mushrooms
  • Sea salt and ground black pepper to taste
  • 2 tablespoons fresh chives or parsley, chopped
  • 4 cups baby spinach, loosely packed
  • 4 large eggs, optional


  1. Drain tuna and place half the oil in a large sauté pan over medium heat. Add onions and potatoes and cook for 8-10 minutes, stirring often, until potatoes are cooked.
  2. Add mushrooms and garlic and cook, stirring often, until garlic is lightly golden.
  3. Add salt, pepper, chives and spinach, stirring to combine. Reduce heat to low, cover and cook for 1 minute until spinach is wilted. Transfer to a plate and cover to keep warm.
  4. Place tuna in skillet over medium heat and cook just until warmed through. Spoon hash with tuna and cover to keep warm.
  5. Place remaining oil in a clean, large non-stick skillet over medium heat. Carefully crack eggs.
  6. To serve, spoon hash onto plates and top with an egg.
