Panini with Tuna, Basil and Parmesan

Ciao, bambini. This panini delivers the taste of an authentic crunchy Italian sandwich.

  • 1 (5 ounce) can Genova Tuna in Olive Oil
  • Juice and zest from 1 lemon
  • Juice and zest from 1 lime
  • Sea salt and freshly ground black pepper
  • 1/4 cup pine nuts, toasted
  • 1/4 cup shredded Parmesan cheese
  • 1/2 cup fresh basil leaves
  • 1/2 cup baby spinach leaves
  • 8 slices sourdough bread


  1. Place tuna (and the oil its packed in) in a small bowl. Add lemon and lime juice and zest, stirring to combine.
  2. Preheat a grill pan over medium high heat.
  3. Working in batches if necessary, place 4 bread slices on grill pan. Sprinkle with cheese, tuna, pine nuts, basil and spinach. Top with remaining bread, pressing firmly on top with a large spatula while grilling. Cook until bread is golden brown and cheese begins to melt, about 2 minutes. Carefully turn over and cook an additional 2 minutes, pressing firmly.
  4. Cut in half before serving. Serve warm.
