Nicoise Inspired Salad

This is a nicoise inspired salad and I love the various colors and vegetables in this salad. The final result is like a piece of art. The salad is light and refreshing yet still very substantial.

Total Time 2 Servings

  • 4-5 Red potatoes, cut into ½ inch thick slices
  • 2 cups haricot verts
  • 1 cup cherry tomatoes, cut in half
  • ¼ cup nicoise olives
  • ¼ cup sliced red onions
  • 1 Genova Yellowfin Tuna in Olive Oil in Easy Open Can
  • 1 hard boiled egg

  • 1 tbsp chopped shallots
  • 1 clove of garlic, minced
  • 2 tsp of Dijon mustard
  • 1 tbsp of honey
  • ¼ tsp dried thyme
  • 3 tbp of champagne vinegar
  • 1/2 tsp kosher salt
  • 1/2 cup of extra virgin olive oil

  1. Boil potatoes and haricot verts for 8-10 minutes until fork tender. Drain completely.
  2. To make dressing, combine shallots, garlic, dijon mustard, honey, thyme, champagne vinegar, and kosher salt. Mix well. While whisking vigorously, pour in olive oil to emulsify.
  3. In a large bowl, add red potatoes, haricot verts, cherry tomatoes, nicoise olives, red onions. Toss with dressing.
  4. To serve, add salad to large plate, add Genova Tuna on top or side, and a hard egg cut in half. Add fresh cracked pepper to taste. Enjoy!
